Waldorf Salad

Ingredients:

  • 2 celery ribs, chopped
  • 1 1/2 cups of walnuts, chopped
  • 3 apples, chopped
  • 3 chicken breasts, boneless, skinless, poached and torn into small pieces
  • 1/2 tsp of tarragon
  • 1/2 cup of mayonnaise

Directions:

  1. Mix all the ingredients in a glass bowl.
  2. Chill for one hour before serving.

Serves: 3-4 persons

 

 

 

Chicken Breast and Peppercorn Salad

Ingredients:

  • 3 chicken breasts, boneless and skinless
  • 1 onion
  • 1 cup of heavy cream
  • 2 tbsp of olive oil
  • 1 package of fettuccini, boiled
  • 1/2 cup of sour cream
  • 1 tbsp of capers
  • 1 tbsp of chives, chopped
  • 2 tbsp of green peppercorns, muddled

Directions:

  1. Sautee the onion, chicken and peppercorns in the olive oil for 4 minutes.
  2. Add the capper and chives and simmer for another minute.
  3. Add the cream and sour cream and simmer until the mixture becomes thick.
  4. Boil and strain the fettuccini and add it to the chicken peppercorn mix.

Serves: 4 persons
