Sunflower Salad

Ingredients:

  • 2 cups of peas, cooked and cooled
  • 2 cups of toasted sunflower seeds
  • 1 pint of grape tomatoes, halved
  • 2 cups of cubed pineapple
  • 1 cup of chopped, cooked bacon
  • 1 cup of soy mayonnaise
  • 4 tbsp of brown sugar
  • 3 tbsp of vinegar
  • salt and pepper

Directions:

  1. Toss all the ingredients together in a glass bowl.
  2. Chill before serving.

 

 

 

Watercress and Lime Salad

Ingredients:

  • 1/2 cup of hearts of palm, rinsed and chopped
  • 1 cup of thinly chopped tomatoes
  • 1 cup of watercress leaves
  • 1 cup of papaya, seeded and cubed
  • 2 tbsp of lime juice
  • 2 tbsp of cilantro
  • 1 tsp of salt
  • 1/2 tsp of coriander
  • 1 tbsp of mint
  • 1 tsp of olive oil

Directions:

  1. Toss all the ingredients together in a glass bowl.
  2. Chill before serving.
