Inexpensive Ovens



 

South pacific beef salad

Ingredients:

  • 3 cups of thinly sliced beef
  • 1 tbsp of ginger root, grated
  • 1 can of pineapple, drained
  • 1 tbsp of fish sauce
  • 2 tbsp of sesame oil
  • 2 cups of baby spinach
  • 1 tbsp of coriander
  • 1 onion, chopped
  • 1 tbsp of sugar
  • 1 tbsp of red pepper flakes

Directions:

  1. Sautee the ginger, onion and hot pepper flakes in the sesame oil for 2 minutes.
  2. Add the beef, coriander, pineapple, fish sauce and sugar.
  3. Simmer for 4 minutes.
  4. Add the spinach and simmer until it wilts.
  5. Serve hot with rice.

Serves: 4 persons

 

 

 

Chicken salad with vinaigrette

Ingredients:

  • 1/3 c. olive oil
  • ¼ c. honey mustard
  • 2 tbsp. balsamic wine vinegar
  • 8 c. mixed salad greens
  • 4 small boneless skinless chicken breasts, grilled and sliced into strips
  • 1 pkg. (4 oz.) feta cheese, crumbled
  • 1 c. croutons
  • 2 tbsp. water
  • 1/3 tsp. salt

Directions:

  1. Whisk together oil, mustard, vinegar, water and salt.
  2. Arrange greens, chicken, cheese and croutons on serving plates and serve with the above mixture.

Serves 4 persons
