Seafood potato salad

Ingredients:

  • 1 red onion, chopped
  • 4 potatoes, boiled and cubed
  • 3 cups of octopus, boiled, cleaned and chopped
  • 4 tbsp of lemon juice
  • pepper and salt
  • 4 tbsp of olive oil

Directions:

  1. Mix all the ingredients together in a large glass bowl.
  2. Refrigerate for 3 hours before serving.
  3. Add salt and pepper to taste.

Serves: 4 persons

 

 

 

Chickpea salad

Ingredients:

  • 2 pitas, torn into small pieces
  • 4 tomatoes, chopped
  • 2 red bell peppers, chopped
  • 6 spring onions, chopped
  • 2 cans of chickpeas, drained and rinsed
  • 1/2 cup of olive oil
  • 1 tbsp of lemon juice
  • 1 tsp of cumin
  • 5 tbsp of fresh chopped parsley
  • salt and pepper

Directions:

  1. Mix the lemon juice, olive oil, cumin and spring onions together.
  2. Allow lemon juice mixture to marinate for 1 hour.
  3. Combine the other ingredients together in a large bowl.
  4. Pour the lemon juice mixture over top and mix well.
  5. Add salt and pepper to taste.

Serves: 4 persons
