Mint potato salad

Ingredients:

  • 4 large potatoes, boiled, peeled and cubed
  • 1 cup of mint, chopped
  • 6 tbsp of olive oil
  • salt and pepper
  • 1/2 cup of pistachios, crushed

Directions:

  1. Sautee the mint and pistachios in the oil for 5 minutes.
  2. Combine the sautéed mint and pistachios and oil with the potatoes in a bowl.
  3. Sprinkle salt and pepper and mix well.
  4. Refrigerate the potato salad for 1 hour before serving.

Serves: 4 persons

 

 

 

Tropical fall salad

Ingredients:

  • 1 pineapple, cubed
  • 2 apples, cubed
  • 4 stalks of celery, chopped
  • 2 tbsp of lemon juice
  • 1/4 cup of walnuts, chopped
  • 3 tbsp of plain yogurt
  • 1 tsp of pepper

Directions:

  1. Combine all the ingredients in a bowl.
  2. Mix the ingredients well and refrigerate them for 2 hours before serving.
