Mint and Fig Salad
Ingredients:
- 10 figs, chopped
- 1 cup of raspberries, washed
- 1 orange, peeled seeded and chopped
- 1/2 cup of fresh mint, chopped
- 2 tbsp of honey
- 1 cup of plain Greek yogurt
Directions:
- Toss the ingredients together in a large glass bowl.
- Refrigerate for 1 hour before serving.
Avocado Salad
Ingredients:
- 3 large avocados, pitted, peeled and cubed
- 2 small garlic cloves, chopped
- 3 tbsp of lime juice
- salt and pepper
- 1 orange, peeled, seeded and chopped
- 1 red onion, chopped
- 1 tbsp of cilantro
- 5 tbsp of olive oil
Directions:
- Mix together the olive oil, garlic, lime juice, and 1 tsp of both salt and pepper.
- Toss the olive oil mixture (vinaigrette) with the remaining ingredients.
- Chill before serving.
