Ham Salad

Ingredients:

  • 1 cup of relish
  • 1 onion, diced
  • salt and pepper
  • 1 1/2 pound of smoked ham, diced
  • 1 1/2 cups of light mayonnaise
  • 1 stalk of celery, chopped

Directions:

  1. Combine all the ingredients and blend them well.
  2. Refrigerate the ham salad for 2 hours before serving on bread or inside finger sandwiches

Serves: 4 – 5 persons

 

 

 

Ham and Spinach Salad

Ingredients:

  • 7 cups of spinach, washed
  • 2 1/2 cups of smoked ham, cubed
  • 1 tbsp of mustard
  • 1 tbsp of red wine vinegar
  • 1 red onion, chopped
  • 1 tbsp of grapefruit juice
  • 4 tbsp of olive oil
  • salt and pepper

Directions:

  1. Mix together vinegar, juice and oil.
  2. In a separate bowl, mix together ham, mustard, and onion.
  3. Pour mixture of wet ingredients over the ham mixture and and mix them well.
  4. Add salt and pepper to taste.
  5. Serve immediately.

Serves: 5 persons
