Green Bean, Raisin and Mint Salad

Ingredients:

  • 6 cups of snow peas, snapped in half
  • 1 cup of raisins
  • 1 small red onion, chopped
  • 3 tbsp of white wine
  • 1 large bunch of mint, chopped
  • 2 tbsp of olive oil
  • salt and pepper
  • 2 tbsp of pine nuts

Directions:

  1. Sautee the onion, pine nuts and raisins in the olive oil over a medium heat for 4 minutes.
  2. Add the snow peas.
  3. Simmer on a low heat for 10 minutes.
  4. Add the mint and simmer for another 2 minutes.
  5. Place the sautéed ingredients in a large bowl and chill them for 2 hours before serving.

Serves: 4 persons

 

 

 

Protein Pasta Salad

Ingredients:

  • (1) 4 oz can of green string beans, strained and washed
  • 1 box of short pasta, boiled in salted water, strained and left to cool
  • 12 quail eggs, boiled, peeled and cut and half
  • 1 small red onion, chopped
  • 6 tbsp of olive oil
  • 1 tbsp of balsamic vinegar
  • (1) 4 oz can of kidney beans, stained and washed
  • (1) 4 oz can of white northern beans, strained and washed
  • 1 tsp of Worcester sauce
  • salt and pepper

Directions:

  1. Combine all ingredients in a large bowl.
  2. Chill for one hour before serving.

Serves: 4-6 persons
