Greek lentil salad

Ingredients:

  • 2 1/2 cups of red red lentils, cooked and chilled
  • 2 cucumbers, peeled and chopped
  • 15 cherry tomatoes, chopped
  • 1 package of feta cheese, cut into small pieces
  • 1 medium onion, chopped
  • 2 tbsp of oregano
  • 1/3 cup of olive oil
  • salt and pepper

Directions:

  1. Mix all ingredients together in a large bowl.
  2. Chill for one hour before eating.

Serves: 4 persons

 

 

 

Wild rice and mushroom salad

Ingredients:

  • 3 1/2 cups of parboiled rice, cooked and chilled
  • (1) 4 oz jar of roasted bell peppers, chopped
  • (1) 4 oz jar of green olives, diced
  • (1) 4 oz jar of marinated mushrooms
  • (1/2 ) 4 oz can of corn
  • 1/3 cup of olive oil
  • 1/2 lemon
  • salt and pepper
  • 10 basil leaves, chopped

Directions:

  1. Strain and wash well roasted peppers, olives, corn and mushrooms.
  2. Mix all ingredients with the rice.
  3. Squeeze the lemon over the mixture.
  4. Chill for an hour before eating

Serves: 5-6 persons
