Cuban chicken salad

Ingredients:

  • 2 cups of chicken breast, boiled and shredded or chicken substitute
  • 1 can of black beans, drained and washed
  • 3 tbsp of olive oil
  • 1 clove of garlic, minced
  • 1 red onion, chopped
  • 1 avocado, peeled and diced
  • 2 tbsp of lime juice
  • 1 head of lettuce, chopped
  • salt and pepper

Directions:

  1. Mix together all the ingredients in a large bowl.
  2. Add salt and pepper to taste.
  3. Serve immediately.

Serves: 4 persons

 

 

 

Italian chicken salad

Ingredients:

  • 4 chicken breast, boneless, skinless, boiled and shredded or chicken substitute.
  • 1/4 cup of feta cheese, crumbled
  • 1 cup of purple olives
  • 1 yellow and 1 red bell pepper, chopped
  • 1 large head of iceberg lettuce, chopped and washed
  • 2 tbsp of oregano
  • 1 cup of sun-dried tomatoes, chopped
  • 3 tbsp of olive oil
  • pepper

Directions:

  1. Mix all the ingredients together in a large bowl.
  2. Serve immediately.

Serves: 4-5 persons
