Cottage Cheese Potato Salad

Ingredients:

  • 3 cup cooked, sliced potatoes
  • ¾ cup diced cucumber
  • 1/3 cup chopped green pepper
  • ¼ cup chopped onion
  • 1/3 cup mayonnaise
  • ¾ cup cottage cheese

Directions:

  1. Toss all ingredients except mayonnaise and cottage cheese in a large bowl and season with salt and pepper.
  2. Mix together mayonnaise and cottage cheese, fold into potato mixture.
  3. Refrigerate at least 2 hours to combine flavors.

 

 

 

French Dressing Potato Salad

Ingredients:

  • 3 cup cooked, sliced potatoes
  • 1/3 cup sliced green olives
  • 1/3 cup sliced radishes
  • ¼ cup diced celery
  • 2/3 cup French dressing

Directions:

  1. Toss all ingredients except dressing in a large bowl and season with salt and pepper.
  2. Fold in French dressing.
  3. Refrigerate at least 2 hours to combine flavors.

 

 

 

Old-Fashioned Mashed Potato Salad

Ingredients:

  • 3 cup mashed potatoes
  • 3 tbs. chopped onion
  • 2 hard cooked eggs, chopped
  • 2 tbs. chopped parsley
  • ¼ cup chopped celery
  • 1/3 cup mayonnaise

Directions:

  1. Mix all ingredients in large bowl, and season with salt and pepper if desired.
  2. Refrigerate 2 hours to combine flavors.
