Campania Salad
Ingredients:
- 4 balls of buffalo mozzarella, sliced
- 18 cherry tomatoes, halved
- 12 basil leaves
- 4 tbsp of olive oil
- Salt and pepper
Directions:
- Arrange the tomatoes, mozzarella slices and basil next to each other on a plate.
- Sprinkle the oil, salt and pepper over top.
- Serve with pieces of toasted bread
Serves: 4 persons
Italian Pasta Salad
Ingredients:
- 5 cups of penne pasta, cooked and chilled
- 2 mozzarella balls, cut into small pieces
- (1/2 ) 4 oz can of corn
- 1/2 cup of green olives, sliced
- 1 bag of rocket salad
- 1 red bell pepper, chopped
- 1 red onion, chopped
- 15 cherry tomatoes, quartered
- Salt and pepper
- 1/3 cup of olive oil
- 2 tbsp of vinegar
- 1 lemon
- 4 large basil leaves, chopped
- 1 tbsp of oregano
Directions:
- Mix all ingredients together in a large bowl.
- Chill for one hour
Serves: 4-5 persons
German Macaroni Salad
Ingredients:
- ½ c celery, chopped
- ½ c onion, chopped
- 1 c. shell pasta, cooked & drained, reserving drippings
- 6 slices bacon, fried crisp & drained
- ½ c sugar
- 3 tbls flour
- ½ tsp salt
- 1/8 tsp pepper
- 1/3 c vinegar
- 1-4oz can mushrooms, reserving liquid
- Mushroom liquid plus water to equal 1 cup
Directions:
- Combine sugar, flour, salt and pepper; blend into bacon drippings.
- Combine vinegar and mushroom liquid plus water.
- Add to flour mixture; cook until thickened.
- Add hot dressing, mushrooms, bacon, onion and celery to pasta.
- Toss to coat thoroughly.
- Serve warm.
