Black Bean and Papaya Salad

Ingredients:

  • (1) 4 oz can of black beans, strained and washed
  • 1 large papaya, peeled and cubed
  • 1 red bell pepper, finely diced
  • 1 red onion, sliced thinly
  • 1 tbsp of ginger root, grated
  • 1 tbsp of freshly chopped mint
  • 1 tsp of basil
  • 4 tbsp of olive oil
  • salt and pepper

Directions:

  1. Mix all ingredients together in a large bowl.
  2. Add salt and pepper to taste.
  3. Chill for 3 hours before serving.

Serves: 4-5 persons

 

 

 

Bean, Pepper and Walnut Salad

Ingredients:

  • 1 cup of walnuts, chopped
  • (1) 4 oz can of peeled tomatoes
  • 1 cup of crushed walnuts
  • (1) 4 oz can of green string beans, strained and washed
  • 2 red or yellow bell peppers, slices into long strips
  • salt and pepper
  • 2 tbsp of white wine
  • olive oil
  • 1 tbsp of parsley
  • 2 garlic cloves, chopped

Directions:

  1. Sautee walnuts and garlic in the olive oil over a medium heat for about 3 minutes.
  2. Add the tomatoes, parsley and wine.
  3. Simmer for 8 minutes.
  4. Allow the sauce to cool.
  5. Add the beans and bell pepper, uncooked, in a large bowl.
  6. Pour the sauce over top and mix well.
  7. Refrigerate the salad for 1-2 hours before serving.

Serves: 4 persons

 

 

 

Watermelon and Tomato Salad

Ingredients:

  • 1 bell pepper, seeded and chopped
  • 4 cups of seedless watermelon
  • 1 large green tomatoes, chopped
  • 2 red tomatoes, chopped
  • 3 cups of seedless grapes
  • 1/2 cup of feta, crumbled
  • 1/2 cup of parsley, chopped

Directions:

  1. Mix all the ingredients in a large glass bowl.
  2. Refrigerate for one hour before serving.
