Spanish rice

Ingredients:

  • 1 can beef broth and 1 can water
  • 1 tomato, chopped
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 tsp. garlic powder
  • 1/4 tsp. cumin
  • 1 c. white rice

Directions:

  1. Brown 1 cup rice in 3 teaspoons olive oil.
  2. Add broth and water to rice; cover and cook until liquid is absorbed.
  3. Add the rest of the ingredients.
  4. Mix and serve.

 

 

 

Fried rice

Ingredients:

  • 2 c. instant rice
  • 2 tbsp. low-sodium soy sauce
  • 1 tbsp. margarine
  • 1 egg substitute
  • 1 tsp. salt
  • 1 tbsp. celery, finely chopped
  • 1 tsp. dried parsley
  • 1 tbsp. pepper
  • 1 tbsp. onion, finely chopped

Directions:

  1. Cook rice and set aside.
  2. In large frying pan melt margarine and scramble in egg substitute.
  3. Add rice and rest of ingredients.
  4. Heat and serve.
