Frozen Mint Pie
Ingredients:
- “ready-made” chocolate pie crust
- 14 oz can sweetened condensed milk
- 1 tsp peppermint extract
- 2 cups whipped topping
- green food coloring
Directions:
- Combine milk, peppermint and food coloring (optional)
- Fold in whipped topping
- Pour into pie crust
- Freeze until firm 5-6 hours
- Keep frozen
Pecan Pie
Ingredients:
- 3 eggs
- 2/3 cup sugar
- 1/2 tsp salt
- 1/3 cup melted butter
- 1 cup light corn syrup
- 1 cup pecan halves
- 1 9" pie crust, baked
Directions:
- Preheat oven to 375 degrees F.
- Beat eggs, sugar, salt, butter, and syrup with rotary beater.
- Stir in nuts.
- Pour into crust.
- Cover with aluminum foil and bake 40-50 minutes at 375 degrees.
Pecan Delight Pie
Ingredients:
- 3 stiff beaten egg whites
- 1 cup sugar
- 1 1/4 tsp baking powder
- 1 cup crushed soda crackers
- 3/4 cup chopped pecans
- 1/2 cup finely chopped dates
- 1 tsp vanilla
- 1-8 oz bowl of whipped topping
Directions:
- Preheat oven to 300 degrees F.
- Beat egg whites until stiff peaks form, then combine sugar and baking powder.
- Fold in crackers, pecans, dates and vanilla; pour into greased 9-inch pie pan.
- Bake at 300 degrees for roughly 25 minutes or until a toothpick inserted into the center of the pie comes out clean.
- Allow pie to cool then top with whipped cream.
