Frozen Mint Pie

Ingredients:

  • “ready-made” chocolate pie crust
  • 14 oz can sweetened condensed milk
  • 1 tsp peppermint extract
  • 2 cups whipped topping
  • green food coloring

Directions:

  1. Combine milk, peppermint and food coloring (optional)
  2. Fold in whipped topping
  3. Pour into pie crust
  4. Freeze until firm 5-6 hours
  5. Keep frozen

 

 

 

Pecan Pie

Ingredients:

  • 3 eggs
  • 2/3 cup sugar
  • 1/2 tsp salt
  • 1/3 cup melted butter
  • 1 cup light corn syrup
  • 1 cup pecan halves
  • 1 9" pie crust, baked  

Directions:

  1. Preheat oven to 375 degrees F.
  2. Beat eggs, sugar, salt, butter, and syrup with rotary beater.
  3. Stir in nuts.
  4. Pour into crust.
  5. Cover with aluminum foil and bake 40-50 minutes at 375 degrees.

 

 

 

Pecan Delight Pie

Ingredients:

  • 3 stiff beaten egg whites
  • 1 cup sugar
  • 1 1/4 tsp baking powder
  • 1 cup crushed soda crackers
  • 3/4 cup chopped pecans
  • 1/2 cup finely chopped dates
  • 1 tsp vanilla
  • 1-8 oz bowl of whipped topping  

Directions:

  1. Preheat oven to 300 degrees F.
  2. Beat egg whites until stiff peaks form, then combine sugar and baking powder.
  3. Fold in crackers, pecans, dates and vanilla; pour into greased 9-inch pie pan.
  4. Bake at 300 degrees for roughly 25 minutes or until a toothpick inserted into the center of the pie comes out clean.
  5. Allow pie to cool then top with whipped cream.
