Apple Crumble Pie

Filling ingredients: 

  • 1 cup sugar 
  • 1/2 cup flour 
  • 2 tsp ground cinnamon 
  • 1/8 tsp. salt 
  • 16 cups tart apples, pared & sliced thinly 

Directions:  

  1. Heat oven to 450 degrees. 
  2. Mix sugar, flour, cinnamon & salt in large bowl. 
  3. Stir in apples. 
  4. Divide mixture and put into 2 unbaked pie shells. 
  5. Apples will be mounded.

Crumb Crust

Ingredients:   

  • 1/2 cup sugar 
  • 3/4 c. flour 
  • 1/3 c. butter or margarine 
  • 1 tsp cinnamon 
  • 1 tsp nutmeg  

Directions:    

  1. Mix sugar and flour in medium bowl 
  2. Cut in margarine and add spices.     

Pie Assembly: 

  1. Preheat oven to 450 degrees F.
  2. Press crumbs into top of pie. 
  3. Bake at 450 degrees for 10 minutes, lower temp. to 350 degrees and bake for additional 40 minutes, until knife in center comes out clean.

Pineapple Icebox Pie

Ingredients:

  • 1 can sweetened condensed milk
  • ½ cup chopped pecans
  • 9 oz container whipped topping
  • 3 tbsp. lemon juice
  • 1 can crushed pineapple
  • 2 “ready-made” graham cracker crusts

Directions:

  1. Add 1 tbsp lemon juice at a time to milk
  2. Add pecans, and pineapple
  3. Fold in whipped topping
  4. Spoon into pie crusts
  5. Refrigerate 4-5 hours
