Raisin and Fig Relish

 Ingredients:

  • 2 cups of white raisins
  • 2 cups of dried figs, chopped
  • 2 cups of sugar
  • 2 cups of brandy
  • 1/4 cup of water

Directions:

  1. Soak the figs and raisins in the brandy overnight.
  2. Add the fruit a pan with the sugar and water.
  3. Simmer on low for 20 minutes.
  4. Scoop the relish into jars and lid them.
  5. Seal the jars by steeping them for 25 minutes in 210 degree water.

 

 

 

Classic Hot Dog Relish

 Ingredients:

  • 5 lbs of cucumbers, chopped finely
  • 2 lbs of onions, chopped finely
  • 3 1/2 cups of vinegar
  • 4 cups of sugar
  • 2 tsp of celery seed
  • 2 tsp of mustard seed
  • 4 green bell peppers, chopped finely
  • 1 hot pepper, chopped
  • 2 tbsp of sea salt

Directions:

  1. Place the chopped vegetables in a large bowl.
  2. Cover them with the sea salt, mix well and let them stand overnight.
  3. Drain the vegetables.
  4. Add the remaining ingredients to the vegetables in a pan.
  5. Simmer on medium high for 16 minutes.
  6. Scoop the relish into jars and lid them.
  7. Seal the jars by steeping them for 25 minutes in 210-degree water.
