Sweet Potato Pasta

Ingredients:

  • 1 package of gnocchi, boiled
  • 2 large sweet potatoes, boiled and mashed
  • 5 cups of spinach
  • salt and pepper
  • 1 tbsp of olive oil
  • 1 onion, chopped
  • 3 pieces of bacon, chopped
  • 2 tbsp of butter
  • 2 tbsp of Parmesan cheese
  • water

Directions:

  1. Sautee the bacon, onion and spinach in the olive oil until the spinach wilts.
  2. Add the sweet potato and butter and simmer for 4 minutes.
  3. Boil and strain the pasta.
  4. Add it to the sweet potato mix and add the Parmesan.
  5. Add salt and pepper to taste.
  6. Mix well.
  7. Serve immediately.

Serves: 4-5 persons

 

 

 

Herb Roasted Chicken Pasta

Ingredients:

  • 3 cups of mushrooms, chopped
  • 4 chicken breasts, boneless and skinless, cubed
  • 1/2 parsley, chopped
  • 20 cherry tomatoes
  • 4 tbsp of wine.
  • 1/4 oregano, chopped
  • 1/4 cup of basil, chopped
  • 1/2 cup of cream
  • 1/3 cup of chicken stock
  • 1 pack of fettuccini
  • 4 tbsp of butter
  • water

Directions:

  1. Heat the oven to 400 degrees.
  2. Add to a baking dish all the ingredients (except for the pasta).
  3. Mix the ingredients well and place them in the oven for 15 minute.
  4. Reduce the heat to 350 and bake for another 15-20 minutes.
  5. Boil and strain the pasta.
  6. Remove the ingredients from the oven and toss them in a large bowl with the pasta.

Serves: 4-5 persons
