Spiral Pasta with Baked Asparagus and Scallions
Ingredients:
- 1 bag of spiral pasta, cut into fourths
- 10 stalks of asparagus
- 2 scallions, sliced
- 1 cup of cubed and fresh mozzarella
- olive oil
- salt and pepper
- water
Directions:
- Preheat oven to 350 degrees F.
- Mix the asparagus and scallions with olive oil in a baking pan.
- Add salt and pepper to taste and place in a 350-degree oven for 10 minutes.
- Boil the pasta in salted water for 10-12 minutes.
- Strain the pasta and mix it together with the baked asparagus and scallions in a large bowl.
- Add the cubed mozzarella immediately.
- Add another 2 tbsp of olive oil if the pasta is too dry.
Bell Pepper and Mozzarella Pasta
Ingredients:
- 1 bag of spiral pasta
- 1 cup of peas, fresh or frozen
- 1 large bell pepper, diced
- 1 1/2 cups of diced fresh mozzarella
- 1 small onion, chopped
- 3 tbsp of vegetable broth
- 5 tbsp of olive oil
- salt and pepper
Directions:
- Boil salted water.
- Sautee the onion in the oil over a medium heat for 3 minutes.
- Add the bell pepper, peas and broth.
- Simmer for 10 minutes.
- Add the pasta to the boiling water.
- Boil for 10-12 minutes.
- Strain the pasta and mix the bell pepper and pea sauce.
- Add immediately the cubed mozzarella and mix well.
Serves: 4 persons
