Spaghetti Amatriciana

Ingredients:

  • 1 bag of spaghetti
  • 1 medium onion, chopped
  • 1/2 cup of bacon, diced
  • 1/2 cup of pecorino cheese
  • 3tbsp of olive oil
  • salt and pepper
  • water

Directions:

  1. Boil salted water for the pasta
  2. Sautee the bacon and onion in the olive oil over a medium heat for 5-7 minutes.
  3. Boil the pasta.
  4. Strain the pasta and mix it in a large bowl with the sautéed bacon and onion, the pecorino cheese and 2 tsp of pepper.
  5. Add salt if needed.

Serves: 4 persons

 

 

 

Fettuccini with Potatoes, Pesto and Beans

Ingredients:

  • 1 bag of fettuccini
  • 2 medium potatoes, diced very small
  • 25 basil leaves
  • (1/2) 4 oz can of green string beans, strained and washed
  • 2 tbsp of pine nuts
  • 1/4 cup of pecorino cheese
  • 1/4 cup of Parmesan cheese
  • 2 garlic cloves, grated
  • olive oil
  • salt
  • water

Directions:

  1. Boil salted water for the pasta.
  2. Add to a food processor the basil, pecorino and Parmesan cheese, pine nuts, and 5-6 tbsp of olive oil.
  3. Process the ingredients on a high speed until they are well blend with the texture of pesto.
  4. Sautee the garlic in 4 tbsp of olive oil for 2 minutes.
  5. Add the potatoes and string beans and simmer for 8-10 minutes or until the potatoes are tender.
  6. Boil the fettuccini for 10-12 minutes.
  7. Strain the fettuccini and mix it in a large bowl with the beans and potatoes and pesto sauce.
