Hearty Sausage Pasta
Ingredients:
- 1 package of spaghetti
- 4 sausage links, the meat removed from their casings
- 1 garlic clove, grated
- 1/2 cup of freshly chopped herbs (sage, mint, parsley)
- 1 large tomato, diced
- 1/2 cup of white wine
- 3/4 tsp of saffron
- 3 tbsp of pecorino cheese
- 3 tbsp of olive oil
- salt and pepper
- water
Directions:
- Boil salted water for the spaghetti.
- Sautee the tomatoes and garlic in the olive oil for 3 minutes.
- Add the sausage and herbs, the white wine and saffron.
- Sautee the ingredients for 6-8 minutes.
- Boil the pasta.
- Strain the pasta and add it to a large bowl with the sausage sauce.
- Add the pecorino cheese.
Serves: 4 persons
Basil and Pecorino Fettuccini
Ingredients:
- 1 bag of fettuccini
- 4 tbsp of olive oil
- 1 orange, squeezed
- 3 tbsp of bread crumbs
- 3 tbsp of chopped basil
- 1 tsp of butter
- 1/2 tsp of hot red pepper flakes
- 1/4 cup of chopped black olives
- 5 tbsp of pecorino cheese, chipped
- 2 tsp of capers
- salt and pepper
- water
Directions:
- Sautee the capers, olives, hot pepper flakes and basil in the olive oil and orange juice over a medium heat for 4-6 minutes.
- Add the breadcrumbs and butter.
- Sautee the ingredients for another 3 minutes.
- Boil the fettuccini in salted water for 10-15 minutes.
- Strain and add the pasta to a large bowl with the sautéed basil sauce.
- Add the pecorino cheese.
- Add salt and pepper to taste.
Serves: 4 persons
