Pasta Primavera

Ingredients:

  • 1 pack of spaghetti
  • 3 artichokes, peeled an chopped
  • 10 cheery tomatoes, halved
  • 1 small yellow bell pepper, chopped
  • 1/4 cup of bacon, chopped
  • 3 tbsp of white wine
  • 1 tbsp of parsley
  • 1 clove of garlic, grated
  • 4 tbsp of olive oil
  • salt and pepper
  • water

Directions:

  1. Boil salted water for the pasta.
  2. Sautee the garlic and bacon in the oil over a medium heat for 3 minutes.
  3. Add the white wine, parsley, bell peppers, artichoke and tomatoes.
  4. Simmer for 10-15 minutes.
  5. Boil the pasta for 9-11 minutes.
  6. Strain and add to a large bowl.
  7. Mix the pasta with the primavera sauce.
  8. Add salt and pepper to taste.

Serves: 4 persons

 

 


Clam and Zucchini Pasta

Ingredients:

  • 1 pack of spaghetti
  • 5 cups of very small fresh clams, in their shells
  • 5 small zucchini, sliced lengthwise
  • 3 cloves of garlic, grated
  • 2 tbsp of white wine
  • 3 tbsp of olive oil
  • 1 tbsp of butter
  • 3 tbsp of freshly chopped parsley
  • salt and pepper
  • water

Directions:

  1. Boil salted water for the pasta.
  2. Sautee the garlic in the oil over a medium heat and in a large pan for 2 minutes.
  3. Add the clams, zucchini, wine, parsley and butter and simmer until the clams open.
  4. Boil the pasta for 9-11 minutes.
  5. Strain the pasta and mix it with the clams, zucchini and the juices from the clams.

Serves: 4 persons
