Pasta Primavera
Ingredients:
- 1 pack of spaghetti
- 3 artichokes, peeled an chopped
- 10 cheery tomatoes, halved
- 1 small yellow bell pepper, chopped
- 1/4 cup of bacon, chopped
- 3 tbsp of white wine
- 1 tbsp of parsley
- 1 clove of garlic, grated
- 4 tbsp of olive oil
- salt and pepper
- water
Directions:
- Boil salted water for the pasta.
- Sautee the garlic and bacon in the oil over a medium heat for 3 minutes.
- Add the white wine, parsley, bell peppers, artichoke and tomatoes.
- Simmer for 10-15 minutes.
- Boil the pasta for 9-11 minutes.
- Strain and add to a large bowl.
- Mix the pasta with the primavera sauce.
- Add salt and pepper to taste.
Serves: 4 persons
Clam and Zucchini Pasta
Ingredients:
- 1 pack of spaghetti
- 5 cups of very small fresh clams, in their shells
- 5 small zucchini, sliced lengthwise
- 3 cloves of garlic, grated
- 2 tbsp of white wine
- 3 tbsp of olive oil
- 1 tbsp of butter
- 3 tbsp of freshly chopped parsley
- salt and pepper
- water
Directions:
- Boil salted water for the pasta.
- Sautee the garlic in the oil over a medium heat and in a large pan for 2 minutes.
- Add the clams, zucchini, wine, parsley and butter and simmer until the clams open.
- Boil the pasta for 9-11 minutes.
- Strain the pasta and mix it with the clams, zucchini and the juices from the clams.
Serves: 4 persons
