Penne Pasta with Tuna and Radicchio
Ingredients:
- 1 box of penne pasta
- 1 can of tuna in oil
- 1 tsp of rosemary
- 1 tbsp of capers
- 1 head of radicchio, chopped
- 1 tsp of lemon juice
- 1 scallion, chopped
- 3 tbsp of olive oil
- salt and pepper
- water
Directions:
- Boil salted water for the pasta.
- Sautee the radicchio in the olive oil over a medium heat.
- Add the rosemary, tuna, capers, lemon juice, and scallion.
- Simmer the ingredients for 6-8 minutes.
- Add the pasta to the boiling water.
- Cook the pasta for 10-12 minutes.
- Strain the pasta and add it to the radicchio/tuna sauce.
- Add salt and pepper to taste.
Serves: 4 persons
Macaroni with Sausage and Ricotta
Ingredients:
- 1 box of macaroni noodles
- 4 links of sausage, cut open and the meat removed from their casings
- 1/2 cup of grated ricotta cheese (ricotta salato)
- 1 onion, chopped
- 2 tbsp of olive oil
- salt and pepper
- 2 tomatoes, chopped
- 2 tbsp of red wine
Directions:
- Boil salted water for the pasta.
- Sautee the sausage meat with the onion and tomatoes.
- Add the wine and olive oil.
- Simmer the ingredients for 7 minutes.
- Boil the macaroni for 9-11 minutes.
- Strain the macaroni and add it to the sausage sauce.
- Sprinkle the ricotta over top.
- Add salt and pepper to taste.
Serves: 4 persons
