Mushroom Pasta
Ingredients:
- 1 box of spaghetti
- 4 cups of washed and diced portabella mushrooms
- 2 cloves of garlic, grated
- 3 tbsp of olive oil
- 1 tsp of vinegar
- 4 tbsp of Parmesan cheese
- 3 tbsp of heavy whipping cream
- Salt and pepper
- water
Directions:
- Boil water for the pasta
- Sautee the garlic in the olive oil.
- Add the mushroom and vinegar.
- Sautee for another 6 minutes.
- Add the whipping cream and salt and pepper to taste.
- Simmer for another 3-5 minutes.
- Add the spaghetti to the pasta.
- Boil for 9-11 minutes.
- Strain the pasta and add it to the mushroom sauce.
- Sprinkle the Parmesan cheese over top.
Serves: 4 persons
Calamari Ring Pasta
Ingredients:
- Ring pasta, cooked and set aside
- 3 small zucchini, sliced
- 3 calamari, clean and cut into rings
- 20 cherry tomatoes, halved
- olive oil
- 1 cup of white wine
- 2 garlic cloves, chopped
- 1 tsp of crushed red pepper flakes
- 2 tbsp of oregano
- salt
Directions:
- Sautee the garlic in 2 tbsp of olive oil.
- Add the cherry tomatoes, oregano and calamari.
- Simmer for 4 minutes.
- Add white wine to cook down the ingredients.
- Add the zucchini and more white wine.
- Simmer for another 4 minutes.
- Add the pasta.
- Simmer for 2 minutes.
- Add salt and pepper to taste.
