Pasta with Salsa Cruda
Ingredients:
- 1 bag of spiral pasta
- 2 tomatoes, chopped
- 4 sweet and hot green peppers, chopped
- 1 tsp of cumin
- 1 tsp of ginger powder
- 1 tsp of crushed red pepper flakes
- 1 tsp of fresh chopped parsley
- 2 small chives, chopped
- 5 tbsp of olive oil
- salt
- water
Directions:
- Boil salted water for the pasta.
- Mix all the ingredients together in a large bowl.
- Boil the pasta for 9-11 minutes.
- Strain the pasta and add it to the bowl of ingredients.
- Mix well.
- Serve the pasta immediately or place it in the refrigerator for 3 hours and serve cool.
Serves: 4 persons
Bean and Pistachio Pasta
Ingredients:
- 1 bag of spiral pasta
- 3 tbsp of pistachios, chopped
- 1/2 cup of ricotta
- (1) 4 oz can of green string beans, strained and washed
- 1 stalk of celery, chopped
- 2 tbsp of white wine
- 1 tbsp of freshly chopped parsley
- 1 clove of garlic, chopped
- 4 tbsp of Parmesan cheese
- 4 tbsp of olive oil
- salt and pepper
- water
Directions:
- Boil salted water for the pasta.
- Sautee the celery and garlic in the olive oil over a medium heat for 3 minutes.
- Add the beans, parsley, wine and pistachios.
- Sautee for 5 minutes.
- Boil the pasta for 10-12 minutes.
- Strain the pasta and mix it in a bowl with the bean sauté.
- Add the ricotta and Parmesan cheese.
- Mix well.
- Add salt and pepper to taste.
Serves: 4 persons
