Pasta with Salsa Cruda


  • 1 bag of spiral pasta
  • 2 tomatoes, chopped
  • 4 sweet and hot green peppers, chopped
  • 1 tsp of cumin
  • 1 tsp of ginger powder
  • 1 tsp of crushed red pepper flakes
  • 1 tsp of fresh chopped parsley
  • 2 small chives, chopped
  • 5 tbsp of olive oil
  • salt
  • water


  1. Boil salted water for the pasta.
  2. Mix all the ingredients together in a large bowl.
  3. Boil the pasta for 9-11 minutes.
  4. Strain the pasta and add it to the bowl of ingredients.
  5. Mix well.
  6. Serve the pasta immediately or place it in the refrigerator for 3 hours and serve cool.

Serves: 4 persons




Bean and Pistachio Pasta


  • 1 bag of spiral pasta
  • 3 tbsp of pistachios, chopped
  • 1/2 cup of ricotta
  • (1) 4 oz can of green string beans, strained and washed
  • 1 stalk of celery, chopped
  • 2 tbsp of white wine
  • 1 tbsp of freshly chopped parsley
  • 1 clove of garlic, chopped
  • 4 tbsp of Parmesan cheese
  • 4 tbsp of olive oil
  • salt and pepper
  • water


  1. Boil salted water for the pasta.
  2. Sautee the celery and garlic in the olive oil over a medium heat for 3 minutes.
  3. Add the beans, parsley, wine and pistachios.
  4. Sautee for 5 minutes.
  5. Boil the pasta for 10-12 minutes.
  6. Strain the pasta and mix it in a bowl with the bean sauté.
  7. Add the ricotta and Parmesan cheese.
  8. Mix well.
  9. Add salt and pepper to taste.

Serves: 4 persons
