Pasta Carbonara

Ingredients:

  • 1 pack of spaghetti
  • 1 cup of diced bacon, raw. The cuts of back should be very thick.
  • 3 eggs, well beaten
  • 2 tbsp
  • salt and pepper
  • 5 tbsp of Parmesan cheese
  • water

Directions:

  1. Boil salted water.
  2. Add the pasta and boil for 9-11 minutes.
  3. Sautee the bacon on a low heat for 6 minutes.
  4. Strain the pasta and add the bacon and oil.
  5. Mix well and immediately add the beaten egg, Parmesan and salt and pepper to taste.

Serves: 4 persons

 

 

 

Green Tomato Spaghetti

Ingredients:

  • 1 pack of spaghetti
  • 3 green, slightly turning pink, tomatoes, diced
  • 2 cloves of garlic, diced
  • 5 leaves of basil, chopped
  • 2 tbsp of white wine
  • 4 tbsp of olive oil
  • 4 tbsp of pecorino cheese
  • salt and pepper

Directions:

  1. Boil salted water.
  2. Sautee the garlic in the oil for 2 minutes.
  3. Add the tomatoes, white wine and basil.
  4. Simmer for 10 minutes until tomatoes fall apart and become sauce.
  5. Boil the spaghetti for 9-11 minutes.
  6. Strain the past and mix it with the green tomato sauce in a large bowl.
  7. Add the pecorino cheese and salt and pepper to taste.

Serves: 4 persons
