Broccoli Pasta

Ingredients:

  • 1 large head of broccoli
  • 2 anchovies
  • 3 tbsp of olive oil
  • 2 cloves of garlic, chopped
  • 1 pack of spaghetti
  • water

Directions:

  1. Boil the broccoli in a large pot of salted water until it turns to mush.
  2. Save the broccoli water.
  3. In a separate pan heat the oil, anchovies and garlic.
  4. Add the mushy broccoli, mix in well with the other ingredients and simmer for 5 minutes, adding the broccoli water if the mixture begins to dry.
  5. The consistency should be a sloppy paste.
  6. While you are making the broccoli paste, drop the pasta in the boiling broccoli water.
  7. When the pasta is cooked and strained, add the broccoli paste.

Serves: 4 persons

 

 

 

Vegetable Lasagna

Ingredients:

  • 9 sheets of lasagna pasta, boiled and set aside for assembly
  • 2 cups of ricotta cheese
  • 2 1/2 cups of boiled spinach
  • 2 garlic cloves
  • salt and pepper
  • 3 tbsp of olive oil

Directions:

  1. Heat oven to 300 degrees F.
  2. Add oil and garlic to pan on medium heat.
  3. Add spinach and fry for 5-10 minutes.
  4. In a separate bowl, add ricotta and the spinach.
  5. Mix well, adding salt and pepper to taste.
  6. Grease a deep baking dish or tray with olive oil.
  7. Set down the first layer of pasta, followed by a layer of ricotta/spinach mix.
  8. Repeat three times.
  9. Place the lasagna in the oven and bake for 15 minutes.

Serves: 4-5 persons
