Broccoli Pasta
Ingredients:
- 1 large head of broccoli
- 2 anchovies
- 3 tbsp of olive oil
- 2 cloves of garlic, chopped
- 1 pack of spaghetti
- water
Directions:
- Boil the broccoli in a large pot of salted water until it turns to mush.
- Save the broccoli water.
- In a separate pan heat the oil, anchovies and garlic.
- Add the mushy broccoli, mix in well with the other ingredients and simmer for 5 minutes, adding the broccoli water if the mixture begins to dry.
- The consistency should be a sloppy paste.
- While you are making the broccoli paste, drop the pasta in the boiling broccoli water.
- When the pasta is cooked and strained, add the broccoli paste.
Serves: 4 persons
Vegetable Lasagna
Ingredients:
- 9 sheets of lasagna pasta, boiled and set aside for assembly
- 2 cups of ricotta cheese
- 2 1/2 cups of boiled spinach
- 2 garlic cloves
- salt and pepper
- 3 tbsp of olive oil
Directions:
- Heat oven to 300 degrees F.
- Add oil and garlic to pan on medium heat.
- Add spinach and fry for 5-10 minutes.
- In a separate bowl, add ricotta and the spinach.
- Mix well, adding salt and pepper to taste.
- Grease a deep baking dish or tray with olive oil.
- Set down the first layer of pasta, followed by a layer of ricotta/spinach mix.
- Repeat three times.
- Place the lasagna in the oven and bake for 15 minutes.
Serves: 4-5 persons
