Walnut Banana Pancakes

Ingredients:

  • 1 cup of buttermilk
  • 1 cup of buckwheat flour
  • 1 tbsp of vegetable oil
  • 1 egg
  • 1 tsp of baking soda
  • 1/2 cup of crushed walnuts
  • 1 tsp of vanilla extract
  • 1 banana, preferably ripe, mashed

Directions:

  1. Mix together the buckwheat flour, baking soda, and crushed walnuts.
  2. Add flour mixture to the buttermilk, vegetable oil, egg, vanilla extract and banana and mix well.
  3. Add small dollops of the pancake batter to a hot greased pan.
  4. Brown the pancakes on both sides.

 

 

 

Potato Pancakes

Ingredients:

  • 5 large potatoes, grated
  • 2 eggs
  • 3 small onions, chopped finely
  • 1 1/2 tbsp of flour
  • 2 tbsp of Parmesan cheese
  • 4 tbsp of olive oil

Directions:

  1. Heat the olive oil in a pan.
  2. Mix together the remaining ingredients
  3. Form small dollar size patties
  4. Fry patties in olive oil until both sides of the potato pancakes are brown.
