Pumpkin Pancakes

Ingredients: 

  • 1 cup of soy milk
  • 2 eggs
  • 1/2 cup of canned or freshly cooked pumpkin
  • 1 tsp of cinnamon
  • 1 tsp of nutmeg
  • 1 tsp of powdered ginger
  • 2 tbsp of brown sugar
  • 1 tsp of baking soda
  • 2 cups of Bisquick mix

Directions:

  1. Mix together the cinnamon, nutmeg, ginger, brown sugar, baking soda, and Bisquick mix.
  2. Add Bisquick mixture to the soy milk, eggs, and pumpkin and mix well.
  3. Add small dollops of the pancake batter to a hot greased pan.
  4. Brown the pancakes on both sides.

 

 

 

Pecan Apple Pancakes

Ingredients:

  • 2 cups of flour
  • 2 cups of soymilk
  • 2 tbsp of brown sugar
  • 2 eggs
  • 1 tbsp of butter, melted
  • 1 tsp of vanilla
  • 1 tsp of baking powder
  • 1 pinch of salt
  • 1/2 cup of crushed pecans
  • 1 1/2 apples, peeled and grated

Directions:

  1. Mix together the flour, brown sugar, baking powder, salt, and crushed pecans.
  2. Add pecan mixture to the soymilk, eggs, butter, vanilla, and apples and mix well.
  3. Add small dollops of the pancake batter to a hot greased pan.
  4. Brown the pancakes on both sides.
