Apple Protein Pancakes

Ingredients:

  • 3 tbsp of plain whey protein powder
  • 5 pieces of wheat toast, pulverized
  • 2 cups of buckwheat flour
  • 1 tbsp of lemon juice
  • 5 apples, peeled and grated
  • 1 tsp of cinnamon
  • 5 eggs whites
  • 1/2 cup of soy milk

Directions:

  1. Mix together whey protein powder, buckwheat flour, cinnamon, wheat toast, pulverized (dry ingredients).
  2. Add dry ingredients to the lemon juice, apples, egg whites and soy milk and mix well.
  3. Add small dollops of the pancake batter to a hot greased pan.
  4. Brown the pancakes on both sides.

 

 

 

Log Cabin Buckwheat Pancakes

Ingredients:

  • 1 1/2 cups of buckwheat flour
  • 1 1/2 cups of soymilk
  • 1 tbsp of vegetable oil
  • 1 tsp of baking powder
  • 1/2 cup of crushed walnuts

Directions:

  1. Mix together the buckwheat flour, baking powder and walnuts (dry ingredients).
  2. Add dry ingredients to the soymilk and vegetable oil and mix well.
  3. Add small dollops of the pancake batter to a hot greased pan.
  4. Brown the pancakes on both sides.
