Jamaican Easter Twists

Ingredients:

  • ¼ oz package of yeast
  • 3 tsp of salt
  • seven cups of hot water
  • 15 lbs of flour
  • ½ cup of cheddar cheese
  • 1 bottle of port wine
  • 1 bottle of molasses
  • 5 lbs of sugar
  • 4 tbsp of cinnamon
  • 1 ½ cup of dried orange peeled
  • 1 tbsp of almond extract
  • 3 tbsp of vanilla extract
  • 1 tsp of salt
  • 2lbs of mixed dry fruits
  • 1 pint of dried cherries

Directions:

  1. Combine the hot water and yeast in a large pot.
  2. Stir and set for 10 minutes.
  3. Fold in 3 lbs of flour and mix until the batter rises.
  4. Fold in the remaining ingredients. Knead the dough for 10 minutes.
  5. Cut the dough into desired lengths and twist the dough.
  6. Place the dough on a greased baking sheet and bake in a 350-degree oven for 1 hour and ½.

 

 

 

Jamaican Peanut Cookies

Ingredients:

  • 2 ½ cups of roasted peanuts, chopped
  • 5 tbsp of ginger
  • 3 cups of brown sugar
  • 1 cup of coconut milk

Directions:

  1. Combine all the ingredients into a pot.
  2. Boil them on high until the milk dissolves and the mixture is thick and sticky.
  3. Drop spoonful size portions of the batter onto a greased baking sheet.
  4. Allow them to chill.

 

 

 

Cassava Cake

Ingredients:

  • 2 cups of sugar
  • 2 eggs, beat
  • 2 cups of coconut milk
  • ½ cup of raisins
  • 3 small sweet cassava, grated finely
  • 1 tsp of baking powder
  • ½ cup of water
  • 1 ½ tsp of vanilla extract
  • 4 oz of butter
  • 3 tbsp of nutmeg
  • 1 tsp of cinnamon

Directions:

  1. Whip together all the ingredients well.
  2. Pour the batter into a greased baking dish and bake at 350-degrees for 1 hour.
