Jamaican Pimento Tripe
Ingredients:
- 1 ¼ pounds of tripe, cleaned and chopped
- 1 can of bushes onion beans
- 1 tsp of thyme
- 5 pimento grains
- 4 ½ cups of vegetable stock
- 2 tbsp of butter
- 1 tsp of black pepper
- 1 rib of celery, chopped
- 2 scallions, chopped
Directions:
- Combine all the ingredients in a crock pot and simmer them on low for 4-5 hours.
- Serve over top rice.
Serves: 4 persons
Jamaican Rum Prawns
Ingredients:
- 1 ½ lbs of prawns, peeled and cleaned
- 3 cloves of garlic, minced
- 1 tbsp of soy sauce
- 3 tbsp of rum
- slat and pepper
- 3 tbsp of olive oil
- ½ cup of ketchup
- 1 can of pineapple, crushed
- 1 onion, chopped
- 2 tomatoes, chopped
Directions:
- Marinate the prawns in all the ingredients over night.
- Stir-fry the ingredients with ¼ cup of vegetable stock for 15-20 minutes.
Serves: 4 persons
Jamaican Salt Fish
Ingredients:
- ¾ lb of salt fish, soaked overnight, cleaned, boned
- 1 onion, chopped
- 2 hot chilies, chopped
- 2 banana peppers, chopped
- 3 tbsp of butter
- salt and pepper
- 3 tomatoes, chopped
- 1 tbsp of thyme
- 5 strips of bacon
- foil
Directions:
- Once the fish is soaked and drained, place it into small foil packs.
- Add the remaining ingredients atop and close the foil packet.
- Place on the grill or in a 400-degree oven for 35 minutes.
Serves: 3-4 persons
