Jamaican Pimento Tripe

Ingredients:

  • 1 ¼ pounds of tripe, cleaned and chopped
  • 1 can of bushes onion beans
  • 1 tsp of thyme
  • 5 pimento grains
  • 4 ½ cups of vegetable stock
  • 2 tbsp of butter
  • 1 tsp of black pepper
  • 1 rib of celery, chopped
  • 2 scallions, chopped

Directions:

  1. Combine all the ingredients in a crock pot and simmer them on low for 4-5 hours.
  2. Serve over top rice.

Serves: 4 persons

 

 

 

Jamaican Rum Prawns

Ingredients:

  • 1 ½ lbs of prawns, peeled and cleaned
  • 3 cloves of garlic, minced
  • 1 tbsp of soy sauce
  • 3 tbsp of rum
  • slat and pepper
  • 3 tbsp of olive oil
  • ½ cup of ketchup
  • 1 can of pineapple, crushed
  • 1 onion, chopped
  • 2 tomatoes, chopped

Directions:

  1. Marinate the prawns in all the ingredients over night.
  2. Stir-fry the ingredients with ¼ cup of vegetable stock for 15-20 minutes.

Serves: 4 persons

 

 

 

Jamaican Salt Fish

Ingredients:

  • ¾ lb of salt fish, soaked overnight, cleaned, boned
  • 1 onion, chopped
  • 2 hot chilies, chopped
  • 2 banana peppers, chopped
  • 3 tbsp of butter
  • salt and pepper
  • 3 tomatoes, chopped
  • 1 tbsp of thyme
  • 5 strips of bacon
  • foil

Directions:

  1. Once the fish is soaked and drained, place it into small foil packs.
  2. Add the remaining ingredients atop and close the foil packet.
  3. Place on the grill or in a 400-degree oven for 35 minutes.

Serves: 3-4 persons
