Jamaican Turkey Soup
Ingredients:
- 5 turkey thighs or drumsticks
- 6 cups of vegetable stock
- 2 sweet potatoes, peeled and chopped
- 2 oranges, peeled and chopped
- 4 tomatoes, chopped
- 2 cups of water
- 2 tbsp of lime
- 3 onions, chopped
- ½ cup of cilantro, chopped
- 2 chilies, chopped
- 2 tbsp of olive oil
- 2 tbsp of sugar
- salt and pepper
- 2 bay leaves
- 2 tbsp of corn starch
Directions:
- Combine all the ingredients in a crock pot.
- Simmer all day.
- Remove the turkey bone and replace the meat back into the soup.
- Serve with rice.
Serves: 6-8 persons
Jamaican Chicken Soup Pie
Ingredients:
- 2 pre made pie shells
- 1 cup of cream of chicken soup
- 2 yams, peeled, cubes and cooked
- 1 cup of black beans, cooked
- 4 cups of mashed potatoes, made
- 2 bags of mixed vegetables
- 1 tsp of soy sauce
- 1 tsp of lime juice
- salt and pepper
Directions:
- Set the mashed potatoes and pie shells aside.
- Combine the remaining ingredients and pour them into the pie shells.
- Top them with the mashed potatoes.
- Bake in a 400-degree oven for 40 minutes.
Serves: 8 persons
JAMAICAN BEEF SOUP
Ingredients:
- 10 cups of vegetable stock
- 2 ½ cups of acorn squash, peeled and cubed
- 2 lbs of round beef chuck, cubed
- 3 carrots, cubed
- 2 turnips, cubed
- salt and pepper
- 3 garlic cloves, minced
- 1 tsp of oregano
- 2 onion, chopped
- 2 potatoes, cubed
- 1 sweet potato, cubed
- 1 scallion, chopped
- 2 tbsp of olive oil
- 1 green bell pepper, chopped
- 1 tsp of allspice
- 1 tsp of thyme
Directions:
- Sautee the beef in the olive oil and oregano in a crock pot for 5 minutes.
- Add the remaining ingredients and simmer on low for 4 hours.
- Serve with rice.
Serves: 8-10 persons
