Jamaican Snapper

Ingredients:

  • Vegetable oil
  • 4-6 snapper fillets
  • 1 ¼ cups of flour
  • 2 tbsp of ginger powder
  • 6 tbsp of pineapple juice
  • 2-3 eggs, beat
  • 2 plantains, chopped
  • 3 tbsp of banana liqueur
  • salt and pepper

Directions:

  1. Sift together the flour, ginger, salt and pepper.
  2. Roll the fish fillets in the egg and flour mixture.
  3. Fry them in the vegetable oil with the pineapple juice and plantains until they are well cooked and brown.

Serves: 4-5 persons

 

 

 

Jamaican Sea Bass

Ingredients:

  • Vegetable oil
  • 4-6 sea bass fillets
  • 1 cups of flour
  • 2 tbsp of ginger powder
  • 1 tbsp of cayenne pepper
  • 2 tbsp of lime juice
  • 1 tbsp of jerk seasoning
  • ½ cup of vinegar
  • 2-3 eggs, beat
  • 1 green pepper
  • 2 red onions, chopped
  • 1 mango, chopped
  • ¼ cup of fresh mint, chopped
  • 1 cup of soy
  • salt and pepper

Directions:

  1. Set aside the oil. Combine all the remaining ingredients in a plastic bag and refrigerate them for 24 hours.
  2. Remove the sea bass from the bag after 24 hours.
  3. Roll them in egg and flour.
  4. Fry it in 2 inches of vegetable oil in a deep pan until browned.
Serves: 5-6 persons

 

 

 

Jamaican Shrimp

Ingredients:

  • 2 lbs of shrimp, cleaned and peeled
  • 1 ½ tbsp of jerk seasoning
  • 2 tbsp of brown sugar
  • 4 tbsp of soy sauce
  • 4 tbsp of lime juice
  • ¼ cup of ginger, grated
  • 4 tbsp of olive oil

Directions:

  1. Stir-fry all the ingredients together until the shrimp is well cooked.
  2. Serve with rice and lime wedges.

Serves: 4-5 persons
