Jamaican Papaya Shrimp

Ingredients:

  • 1 ½ lbs of shrimp, peeled and cleaned
  • 2 papayas, peeled, pitted and cubed
  • 1 red onion, chopped
  • 1 lime, squeezed
  • 3 tbsp of olive oil
  • 2 tsp of soy sauce
  • 2 tbsp of brown sugar
  • 1 tsp of nutmeg
  • 1 tsp of ginger

Directions:

  1. Stir fry all the ingredients in a wok on high for 15 minutes, or until the shrimp is cooked.
  2. Serve over top rice.

Serves: 4 persons

 

 

 

Jamaican Curry Shrimp

Ingredients:

  • 2 lbs of shrimp, peeled and cleaned
  • 2 tbsp of yellow curry
  • 1 cup of pineapple
  • 1 tomato, chopped
  • 1 onion, chopped
  • 1 tbsp of lime juice
  • 2 tbsp of brown sugar
  • salt and pepper

Directions:

  1. Stir-fry all the ingredients in a large pan until the shrimp is well cooked.
  2. Serve over top rice.

Serves: 6 persons

 

 

 

Jamaican Mint Shrimp

Ingredients:

  • 2 lbs of shrimp, peeled and cleaned
  • 1 cup of mint, chopped
  • 1 tomato, chopped
  • 1 onion, chopped
  • 1 tbsp of lime juice
  • 3 tbsp of brown sugar
  • salt and pepper
  • 1 tsp of corn starch

Directions:

  1. Stir-fry all the ingredients in a large pan until the shrimp is well cooked.
  2. Serve over top rice.
Serves: 5 persons
