Jamaican Gungo Peas and Coconut Rice

Ingredients:

  • 2 ¼ cups of rice
  • salt and pepper
  • 1 green pepper, diced
  • 2 garlic cloves, chopped
  • ½ cup of gungo peas, cooked
  • 2 cups of coconut milk
  • 2 cups of vegetable stock

Directions:

  1. Combine all the ingredients in a pot.
  2. Bring them to a boil and reduce the heat.
  3. Simmer covered on low until the liquid has boiled off and the rice is cooked.
Serves: 5-6 persons

 

 

 

Traditional Jamaican Rice

Ingredients:

  • 4 ¼ cups of water
  • 1 cup of dried kidney beans, cooked
  • 2 scallions, chopped
  • 1 tsp of thyme
  • 6 tsp of salt
  • ½ cup of coconut, shredded
  • 6 cups of water
  • 4 cups of rice
  • 1 green chili

Directions:

  1. Mix all the ingredients together and pour them into a greased glass baking pan.
  2. Bake in a 400-degree oven until the rice is cooked.

 

 

 

Jamaican Pork Fried Rice

Ingredients:

  • 5 cups of rice, cooked
  • 1 bell pepper, chopped
  • ½ lb of pork of ham hoc pieces, chopped
  • 1 egg, beaten
  • 2 tbsp of spy sauce
  • salt and pepper
  • 4 tbsp of vegetable oil
  • 1 onion, chopped
  • 1 sweet potato, peeled, boiled and chopped

Directions:

  1. Fry all the ingredients in a wok on high heat for 10 minutes.
  2. Add the egg. Wisk the rice vigorously.
  3. Add salt and pepper to taste.

Serves: 5-6 persons
