Jamaican Sweet Potato Pudding
Ingredients:
- ½ cup of flour
- 2 ½ lbs of sweet potatoes, boiled, peeled and mashed
- ½ cup of raisins
- 1 tsp of baking powder
- ¾ lb of brown sugar
- 1 ¼ tsp of vanilla
- 1 ¾ cups of butter
- 1 tsp of nutmeg
- 4 ¼ cups of coconut milk
Directions:
- Cream all the ingredients together.
- Pour the pudding into a greased pan and into a 350-degree oven for 1 hour.
- Stick a knife into the pudding to test that it has baked through.
Jamaican Black Pie
Ingredients:
- 1 pie crust (store bought graham cracker)
- 2 cups of cream
- 1 packet of flavorless gelatin
- 12 oz of semi sweet chocolate, melted
- 6 tbsp of water
- 1 tbsp of vanilla
- 2 pinches of ginger
- 1 12/ cups of powdered sugar
- 5 tbsp of corn starch
- 1 pinch of salt
- 2 egg whites
Directions:
- Combine all the ingredients and mix well.
- Pour the mixture into the pie shell.
- Bake at 300 degrees for 10 minutes.
- Refrigerate for 4 hours before serving.
Jamaican Chocolate Squares
Ingredients:
- 3 eggs
- 1 cup of cocoa
- 2 cups of brown sugar
- 1 cup of pecans, chopped
- 1 cup of chocolate chips
- 1 ½ cups of flour
- 1 ½ tsp of vanilla extract
- 1 pinch of salt
- ¾ cups of crystallized ginger
- 2 shots of espresso
- 2 sticks of butter
Directions:
- Mix the dry ingredients together.
- Mix the wet ingredients together.
- Cream both the mixtures together and pour the batter into a 13x9 greased pan.
- Bake them in a 350-degree oven for 25 minutes.
