Jamaican Sweet Potato Pudding

Ingredients:

  • ½ cup of flour
  • 2 ½ lbs of sweet potatoes, boiled, peeled and mashed
  • ½ cup of raisins
  • 1 tsp of baking powder
  • ¾ lb of brown sugar
  • 1 ¼ tsp of vanilla
  • 1 ¾ cups of butter
  • 1 tsp of nutmeg
  • 4 ¼ cups of coconut milk

Directions:

  1. Cream all the ingredients together.
  2. Pour the pudding into a greased pan and into a 350-degree oven for 1 hour.
  3. Stick a knife into the pudding to test that it has baked through.

 

 

 

Jamaican Black Pie

Ingredients:

  • 1 pie crust (store bought graham cracker)
  • 2 cups of cream
  • 1 packet of flavorless gelatin
  • 12 oz of semi sweet chocolate, melted
  • 6 tbsp of water
  • 1 tbsp of vanilla
  • 2 pinches of ginger
  • 1 12/ cups of powdered sugar
  • 5 tbsp of corn starch
  • 1 pinch of salt
  • 2 egg whites

Directions:

  1. Combine all the ingredients and mix well.
  2. Pour the mixture into the pie shell.
  3. Bake at 300 degrees for 10 minutes.
  4. Refrigerate for 4 hours before serving.

 

 

 

Jamaican Chocolate Squares

Ingredients:

  • 3 eggs
  • 1 cup of cocoa
  • 2 cups of brown sugar
  • 1 cup of pecans, chopped
  • 1 cup of chocolate chips
  • 1 ½ cups of flour
  • 1 ½ tsp of vanilla extract
  • 1 pinch of salt
  • ¾ cups of crystallized ginger
  • 2 shots of espresso
  • 2 sticks of butter

Directions:

  1. Mix the dry ingredients together.
  2. Mix the wet ingredients together.
  3. Cream both the mixtures together and pour the batter into a 13x9 greased pan.
  4. Bake them in a 350-degree oven for 25 minutes.
