Jamaican Raisin Rice Salad
Ingredients:
- ½ cup of raisins
- 1 pinch of salt
- 2 cups of rice, cooked
- 1 can of mandarin oranges
- salt and pepper
- 1 cucumber, chopped
- 1 cup of pecans, chopped
- 1 cup of celery, diced
- 8 tbsp of plain yogurt
- 3 tbsp of olive oil
- 1 tsp of lime juice
- 1 tsp of soy sauce
Directions:
- Toss all the ingredients together.
- Refrigerate them for 2 hours before serving the salad.
- Serve inside a lettuce leaf.
Serves: 5 persons
Tangy Potato Salad
Ingredients:
- 6 slices of bacon, chopped and cooked (save the grease)
- 3 ¼ lbs of potatoes, boiled and cubed
- 1 tbsp of spicy mustard
- 3 tbsp of lime juice
- 1 tsp of all spice
- salt and pepper
- ¼ tsp of turmeric
- 4 eggs, boiled, peeled, cooled and chopped
- 1 ½ cups of mayonnaise
- 1 tbsp of thyme
- ¾ cup of celery, chopped
- ¾ cup of onion, chopped
Directions:
- Toss all the ingredients together in a big glass bowl and refrigerate for 4 hours before serving.
- Add salt and pepper to taste.
Jamaican Tossed Salad
Ingredients:
- 1 bunch of basil. Chopped
- 5 tomatoes, chopped
- 8 artichoke hearts, chopped
- 2 purple onions, chopped
- 1 tbsp of lime juice
- 2 heads of radicchio, chopped
- 2 heads of endive, chopped
- 6 tbsp of olive oil
- 4 eggs, boiled, peeled and chopped
- 2 mangos, peeled, pitted and cubed
Directions:
- Toss the salad well.
- Add salt and pepper to taste.
- Serve immediately.
Serves: 6-8 persons
