Jamaican Sweet Pepper and Cabbage
Ingredients:
- 1 cabbage, chopped
- 3 tbsp of butter
- 1 chili, chopped
- 2 garlic cloves, chopped
- 3 tbsp of brown sugar
- 1 tsp of thyme
- 2 sweet peppers, chopped
- 2 onions, chopped
- 2 cups of vegetable stock
- salt and pepper
Directions:
- Add all the ingredients to a crock pot and simmer them on low until the vegetables are well cooked.
- Serve over top rice.
Serves: 4-5 persons
Jamaican Ginger Eggplant
Ingredients:
- 2 eggplants, peeled, cubed, salted and rinsed
- 3 garlic cloves, minced
- 2 tbsp of soy sauce
- 1 tbsp of vinegar
- 2 tbsp of ginger, minced
- ½ cp of vegetable stock
- 2 tbsp of olive oil
- 3 scallions, chopped
- 1 chili, chopped
- 2 tomatoes, chopped
Directions:
- Stir fry all the ingredients until the eggplant is soft and cooked.
- Serve over top rice.
- Optional: drizzle 1 tsp of sesame oil.
Serves: 5-6 persons
Jamaican Gratin
Ingredients:
- 12 sweet potatoes, peeled and cut into 1/2 inch rounds
- 6 granny smith apple, peeled cored and sliced in medium thick rounds
- 3 tbsp of lime juice
- 4 tbsp of brown sugar
- 1 onion, quartered and separated
- 4 tbsp of butter
Directions:
- Layer the potatoes, onion, apple, lime juice, sugar and butter in a greased casserole pan.
- Bake at 400 degrees for 20 minutes.
- Reduce the heat to 350 and bake another 10 minutes.
Serves: 5 persons
