Jamaican Pumpkin Pancake
Ingredients:
- 1 cup pf pumpkin, cubed, boiled and mashed
- bisquick
- 1 tsp of cinnamon
- ½ tsp of nutmeg
- ½ tsp of powdered ginger
- ½ tsp of crushed cloves
Directions:
- Follow the recipe for pancakes on the bisquick box and mix all the ingredients with the other ingredients: nutmeg, cinnamon, ginger, cloves and pumpkin. Cook them like pancakes.
Serves: 5 persons
Jamaican Rum Cake
Ingredients:
- 5 eggs
- 3 cups of white flour
- 2 tsp of baking powder
- 2 cups of rum
- 2 ½ sticks of butter
- 1 tbsp of vanilla extract
- 1 cup of toasted pecans
- 2 cups of brown sugar
- 1 pinch of salt
- 1 cup of water
Directions:
- Combine the wet and dry ingredients separately and then fold them together.
- Bake the cake in a greased spring-form pan.
- Bake at 350-degrees for 1 hr 15 minutes.
Jamaican Pasta
Ingredients:
- 1 pack of spaghetti, boiled and ready
- 4 tbsp of olive oil
- 1 onion
- 1 tbsp of lime juice
- 1 tsp of lime rind grated
- salt and pepper
- 1 tsp of allspice
- 2 tbsp of sugar
- ½ tsp of nutmeg
- 2 scallion
- 1 tbsp of chopped coriander
Directions:
- Sautee all the ingredients in the olive oil for 10 minutes.
- Add the pasta and toss for 3 minutes.
- Add salt and pepper to taste.
Serves: 4 persons
