Jamaican Oxtail Stew

Ingredients:

  • 2 ¾ lbs of beef oxtail
  • 1/3 cup of dried white beans
  • 2 tbsp of vegetable oil
  • 4 tbsp of garlic, minced
  • 1 tbsp of lime
  • 2 tsp of red curry paste
  • salt and pepper
  • 2 tomatoes, chopped
  • 3 cups of beef stock
  • 5 cups of water
  • 2 carrots, peeled and chopped
  • 2 cups of rice, cooked
  • 2 sweet potatoes, peeled and cubed
  • 2 potatoes, peeled and cubed

Directions:

  1. Set the rice aside. Bring all the ingredients to a boil.
  2. Reduce the heat and simmer on low, covered, for 1 ½ hrs.
  3. Remove the oxtail pieces and discard them. Add the rice.

Serves: 5-7 persons

 

 

 

Jamaican Stew

Ingredients:

  • 1 ½ lbs of beef sirloin, cubed
  • 1 ½ cups of peas
  • 2 chilies, chopped
  • 3 sweet potatoes
  • 1 bunch of kale
  • 6 cups of chicken stock
  • 2 onions
  • 3 white potatoes
  • thyme
  • 2 cups of coconut cream
  • 2 cloves of garlic, minced
  • salt and pepper
  • 1 tsp of allspice

Directions:

  1. Add all the ingredients to a crock pot and simmer on low for 5-6 hours.
  2. Add salt, pepper and thyme to taste.
  3. Serve over top rice.
Serves: 6-7 persons

 

 

 

Jamaican Chickpea Stew

Ingredients:

  • 1 can of chick peas, strained and rinsed
  • 2 potatoes, peeled and chopped
  • 2 onions, chopped
  • 7 cups of water
  • 5 chicken stock cubs
  • 2 tomatoes, chopped
  • 5 cloves of garlic, chopped
  • 1 tbsp of thyme
  • 1 tsp of cumin
  • 3 tbsp of olive oil
  • 1 tbsp of butter
  • 2 tbsp of corn starch

Directions:

  1. Bring all the ingredients to a boil.
  2. Reduce the heat and simmer on low for 1 hour.
  3. Run the ingredients through a food mill and return the soup to the pot to keep warm.
  4. Serve with olive oil poured over top.
Serves: 6-8 persons
