Jamaican Mackerel


  • 2 lbs of mackerel, cleaned
  • 1 cup of coconut milk
  • 3 garlic cloves
  • 2 tbsp of butter
  • 3 scallions, chopped
  • 3 tomatoes, chopped
  • 2 onions, chopped
  • 1/2 cup of vegetable broth


  1. Add all the ingredients to a baking pan.
  2. Cover with foil.
  3. Bake the fish in a 450-degree oven for about 25-30 minutes.
  4. Serve with rice.
Serves: 4 persons




Jamaican Surf and Turf


  • 3 sirloin steaks, sliced into strips
  • 1 can of crushed pineapple
  • 1 lb of shrimp, cleaned and peeled
  • 2 tbsp of jerk seasoning
  • 1 onion, chopped
  • 1 green pepper, chopped
  • 3 tbsp of olive oil
  • 2 tbsp of lime juice
  • 2 tbsp of ginger, grated


  1. Sautee all the ingredients in a woke until the steak and shrimp are cooked.
  2. Serve with rice.
  3. Add salt and pepper to taste.
Serves: 4 persons
