Jamaican Loaf

Ingredients:

  • 1 cup of coconut milk
  • ½ cup of cocoa powder, unsweetened
  • 4 tbsp of shortening
  • 3 cups of flour
  • 1 yeast cake
  • 1 pinch of salt
  • ¼ cup of brown sugar
  • 2 tbsp of white sugar
  • ¼ cup of warm water

Directions:

  1. Mix the yeast in the water.
  2. Mix the dry and wet ingredients separately and then together. Add the yeast water.
  3. Knead the dough and allow it to rise until it’s doubled in size.
  4. Knead the dough again.
  5. Beat it into the shape of a loaf and place it into a greased pan.
  6. Bake the loaf for 1 hour.

 

 

 

Jamaican Pecan Brownies

Ingredients:

  • 2 sticks of butter
  • 2 cups of sugar
  • 3 tbsp of ground coffee beans
  • ¾ cup of cocoa powder
  • 1 cup of semisweet chocolate
  • 3 tbsp of crystallized ginger
  • 3 eggs
  • 1 pinch of salt
  • 1 ½ cups of flour
  • 1 cup of crushed pecans

Directions:

  1. Cream all the ingredients together.
  2. Pour them in a greased baking pan and bake them in a 350-degree oven for 20 minutes.

Serves: 15 squares

 

 

 

Jamaican Christmas Cake

Ingredients:

  • ½ lb of flour
  • 1 lb of prunes, chopped
  • ½ lb of cherries
  • 1 pt of rum
  • 1 lb of brown sugar
  • 3 tsp of vanilla
  • 1 lb of butter
  • 1 pt of port wine
  • 1 pt of sherry
  • 2 lbs of raisins
  • 2 tsp of baking powder
  • 1 cup of dates
  • 2 tsp of vanilla
  • ¼ cup of lemon, lime and orange peel, grated
  • 12 eggs
  • 2 pinches of cinnamon
  • 1 pinch of nutmeg
  • ½ lb of regular bread crumbs

Directions:

  1. Combine the wet and dry ingredients separately.
  2. Combine them together.
  3. Mix them well.
  4. Pour the batter into greased cake tins and bake them in a 250-degree oven for 4 hours.
