Jamaican Lentil Soup
Ingredients:
- (1) 1 lb bag of red lentils, soaked overnight
- 1 onion, chopped
- 3 tbsp of coriander
- 1 tsp of cumin
- 2 sweet potatoes, peeled and chopped
- 1 cup of coconut milk
- 1 can of pumpkin
- 1 tbsp of red curry paste
- 7 cups of vegetable stock
- 3 garlic cloves, minced
- 2 pieces of ginger, minced
Directions:
- Add all the ingredients to a crock pot and simmer them on low for 5 hours.
Serves: 7-9 persons
Jamaican Bisque
Ingredients:
- I onion, chopped
- 5 cups of chicken broth
- 2 garlic cloves
- 1 cup of parsley
- 1 stick of butter
- 1 yam, peeled and chopped
- 1 tbsp of thyme
- 1 cup of kidney beans
- 1/2 cup of chives
Directions:
- Bring all the ingredients to a boil.
- Reduce the heat and simmer for 1 hour on low.
- Run the ingredients through a food mill.
- Return the bisque to a the pot.
- Keep warm until ready to serve. Add additional butter for a richer bisque.
Serves: 6 persons
Jamaican Salsa
Ingredients:
- 2 kiwi, peeled and chopped
- 2 mangos, peeled, pitted and chopped
- 3 papayas, peeled, pitted and chopped
- 2 tbsp of hot pepper flakes
- 2 pineapples, peeled, cored and chopped
- 2 oranges, peeled and chopped
- 5 tbsp of lime juice
- 4 tbsp of brown sugar
- ½ cup of vinegar
- 1 cup of cilantro, chopped
- 1 cup of pecans
- 1 cup of walnuts
- 1 cup of black beans, cooked
Directions:
- Combine all the ingredients in a large bowl.
- Toss them well and serve chilled or immediately
Serves: 8 persons
