Jamaican Lamb

Ingredients:

  • 2 ¼ lbs of lamb loin
  • 2 onions, chopped
  • 3 chilies, chopped
  • ½ cup of parsley, chopped
  • 2 shallots, chopped
  • 3 scallion, chopped
  • ¼ cup of ginger, grated
  • salt and pepper
  • ¼ tsp of clove
  • ¼ tsp of nutmeg
  • ¼ cup of lime juice
  • 3 tbsp of olive oil
  • 1 tsp of all spice
  • 2 tbsp of brown sugar
  • 3 tbsp of soy sauce
  • 1 tbsp of water

Directions:

  1. Tenderize the lamb loin.
  2. Add the remaining ingredients to a blender and mix them well.
  3. Pour them onto the loin and massage them into it.
  4. Allow the loin to marinate for 6 hours.
  5. Bake the lamb on a low heat, 350-degrees, for 2 hours or until it is well cooked.
Serves: 5-6 persons

 

 

 

Jamaican Curry Goat

Ingredients:

  • 2 onions, chopped
  • 2 garlic gloves, minced
  • vegetable oil
  • 2 tbsp of Jamaican Curry Powder or paste
  • salt and pepper
  • 1 hot chili, chopped
  • 2 ¾ lbs of goat meat, cubed
  • 1 tsp of allspice
  • 3 tbsp of vegetable stock
  • 2 tbsp of vinegar

Directions:

  1. Rub the goat meat with the vinegar and all the spices.
  2. Refrigerate for 2 hours.
  3. Cook the goat meat and vegetables in an inch of vegetable oil for 15 minutes, or until they are well done.
  4. Serve with rice

Serves: 5-6 persons

 

 

 

Goat Head Soup

Ingredients:

  • 4 green bananas, peeled and chopped
  • 8 cups of vegetable stock
  • 2 lbs of goat head, chopped
  • 3 potatoes, peeled and chopped
  • 2 tbsp of olive oil
  • 1 tbsp of lime juice
  • 2 green peppers, chopped
  • 2 chilies, chopped
  • 1 tbsp of black pepper
  • salt
  • 2 cups of dumpling mixture, premixed

Directions:

  1. Add all the ingredients, except for the dumpling mix, into a pot and bring them to a boil.
  2. Reduce the heat and simmer on low for 1 ½ hrs.
  3. Remove the pieces of goat head and discard.
  4. Add the dumpling mixture in big dollops on the top of the soup.
  5. Cook for another 20 minutes covered.
  6. Add salt to taste.
Serves: 5-6 persons
