Jamaican Tangerine Ham

Ingredients:

  • ¾ cups of heavy cream
  • 2 eggs
  • 1 can of tangerines
  • 1 tbsp of ginger
  • 1 tsp of nutmeg
  • 3 eggs
  • 2 tbsp of honey
  • 1 grapefruit, crushed
  • (1) 4 lbs of spiral cut ham, cooked

Directions:

  1. Whip together all the ingredients. Bring them to a boil and reduce the heat.
  2. Simmer until they thicken.
  3. Spread the marinade over top the ham and bake for 10 minutes in a 350-degree oven.

 

 

 

Jamaican Ham

Ingredients:

  • 2 tbsp of brown sugar
  • water
  • 2 pinches of salt
  • 1 pinch of nutmeg
  • 1 tsp of cinnamon
  • 1 cup of pineapple, crushed
  • (1) 8-10 lb pork leg, cleaned and prepared
  • 1 lb of salt

Directions:

  1. Pour 1 ½ inches of water in the bottom of a pan. Add the leg of pork.
  2. Wisk together the remaining ingredients and rub the ham with the mixture. Do this every day for five days.
  3. To cure the ham.
  4. Inject the water beneath the ham directly into its skin.
  5. Bake on a low heat in the oven, about 300-degrees, for 4 hours, constantly basting the ham.
Serves: 8-10 persons

 

 

 

Jamaican Spareribs

Ingredients:

  • 2 ¾ lbs of spareribs
  • 1 gallon of water
  • 4 cloves of garlic, whole
  • 2 tbsp of thyme
  • 2 onions, chopped
  • 3 celery ribs
  • 3 scallions, chopped
  • salt and pepper
  • 2 sweet potatoes, boiled and mashed
  • 5 tomatoes, chopped
  • 6 tbsp of brown sugar

Directions:

  1. Boil the ribs in the water with the celery and onion until the ribs are soft.
  2. Puree the remaining ingredients.
  3. Remove the ribs and add them to a grill.
  4. Brush them with the puree and grill them for 10 minutes.
Serves: 5 persons
