Jamaican Squash Fritters
Ingredients:
- 2 cups of squash, grated
- 3 tbsp of brown sugar
- 1/3 cup of milk
- 6 tbsp of flour
- 1 pinch of nutmeg
- 1 tsp of lime juice
- ¼ cup of crushed pineapple
- vegetable oil
- salt and pepper
- 1 egg
Directions:
- Pour 1 inch of vegetable oil in the bottom of a pan and add heat.
- Mash the remaining ingredients together, adding salt and pepper to taste, and smack the mixture into small patties.
- Fry the patties in the vegetable oil until they’re browned and cooked.
Serves: 10-11 persons
Jamaican Banana Fritters
Ingredients:
- 2 cups of green banana, peeled and grated
- 3 tbsp of brown sugar
- 1/4 cup of coconut milk
- 5 tbsp of flour
- 1 tsp of cinnamon
- 1 pinch of nutmeg
- 1 tsp of lemon juice
- ¼ cup of crushed pineapple
- vegetable oil
- salt and pepper
- 1 egg
Directions:
- Pour 1 inch of vegetable oil in the bottom of a pan and add heat.
- Mash the remaining ingredients together, adding salt and pepper to taste, and smack the mixture into small patties.
- Fry the patties in the vegetable oil until they’re browned and cooked.
Traditional Jamaican Johnny Cakes
Ingredients:
- 4 ¼ cups of flour
- vegetable oil
- 2 tsp of baking powder
- ½ cup of butter
- ½ cup of water
- 2 tsp of salt
- 1 tsp of sugar
- 2 tsp of nutmeg
Directions:
- Add the vegetable oil to a pan on the stove over a medium high heat.
- Combine the remaining ingredients.
- Mix them together well.
- Form them into small patty cakes and fry them in the oil until lightly brown.
