Jamaican Chowder
Ingredients:
- 7 potatoes, peeled
- 3 garlic cloves, chopped
- ¼ cup of Italian parsley, chopped
- 3 strips of bacon, chopped
- 2 onions, chopped
- 30 scallops
- 3 stalks of celery, chopped
- 1 can of coconut milk
- 4 cups of heavy cream
- 2 tbsp of lime juice
- 4 tbsp of butter
- 2 cups of fish stock
- 2 cups of vegetable stock
- salt and pepper
Directions:
- Add all the ingredients to a pot or crock pot and bring to a boil.
- Reduce the heat and simmer on a very low heat for 3 ½ hours.
Jamaican Fish Soup
Ingredients:
- 2 ½ quarts of water
- 2 ¼ lbs of white fish, cleaned with the head on
- 2 garlic cloves, chopped
- 1 lime
- 2 scallions, chopped
- slat and pepper to taste
- 4 cups of fish stock
- 2 green bananas, chopped
- 2 pimento seeds
- 1 bay leaf
- 1 tbsp of thyme
- 1 green pepper
- 2 tbsp of olive oil
- 3 onion, chopped
- 2 sweet potatoes, peeled and cubed small
Directions:
- Add all the ingredients to a pot and bring them to a boil.
- Reduce the heat to low and simmer for 2 hours.
- Remove the fish and clean the meat off of them bones.
- Discard the bones and return the meat to the soup.
- Add salt and pepper to taste.
- Serve with rice.
Serves: 6-7 persons
Jamaican Spinach Soup
Ingredients:
- 1 large bag of spinach
- 2 cups of pineapple, chopped
- 2 cans of tomato soup
- 8 cups of vegetable stock
- 1 sweet potato, chopped
- 1 red bell pepper
- 1 hot chili, chopped
- salt and pepper
- 2 tbsp of ginger, chopped
- 1 tbsp of brown sugar
- 3 tbsp of olive oil
Directions:
- Add all the ingredients to a pot or crock pot and bring to a boil.
- Reduce the heat and simmer on a very low heat for 3 ½ hours.
