Jamaican Wedding Cake

Ingredients:

  • 5 oranges, peeled, seeded,
  • 1 cup of condensed milk
  • 6 star apples, chopped
  • 1 tsp of nutmeg
  • 3 tbsp of brown sugar

Directions:

  1. Chopped the oranges, apples and condensed milk together, roughly, in a blender.
  2. Pour them in a owl.
  3. Sprinkle sugar and nutmeg atop.
Serves: 4-6 persons

 

 

 

Plantain Cake

Ingredients:

  • 5 cups of flour
  • 3.5 oz of shortening
  • 5 tsp of salt
  • 2 plantains, ripe and mashed
  • 2 cups of sugar
  • ½ tsp of nutmeg
  • 1 tsp of vanilla

Directions:

  1. Combine the flour with salt and shortening and add cold water to the mix until it forms a thick paste.
  2. Shape the batter into pastry balls, roll them flat and cut them into circular shapes.
  3. Bake them for 30 minutes in a 350-degree oven.
  4. Mash the remaining ingredients together.
  5. Once the pastries are baked, pipe the plantain filling into them like jelly doughnuts.

 

 

 

Jamaican Ginger Cake

Ingredients:

  • 7 cups of flour
  • 2 cups of water
  • 3 cups of brown sugar
  • 3 tbsp of vanilla
  • 3 tbsp of ginger
  • 1 cup of butter
  • ½ tbsp of baking soda
  • 1 tsp of nutmeg
  • 3 tbsp of baking powder

Directions:

  1. Mix the wet and dry ingredients separately and then combine them and mix well.
  2. Pour the batter into a baking dish and bake the cake at 375-degrees for 24 minutes.
