Jamaican Bammy Bread

Ingredients:

  • 1 lb of sweet cassava, peeled, grated, rinsed and wrung dry
  • 1 can of coconut milk
  • 1 egg
  • 1 pinch of salt
  • 4 tbsp of sugar
  • 1 tsp of nutmeg
  • 6 tbsp of flour
  • vegetable oil for frying

Directions:

  1. Combine all the ingredients together and mix them well.
  2. Add more flour if the mix is not pasty enough.
  3. Form the mixture into patties and fry them in the olive oil.
  4. Sprinkle them with cinnamon and sugar before serving.

Serves: 7-10 persons

 

 

 

Coco Bread

Ingredients:

  • 2 packs of yeast soaking in ¼ cup of warm water
  • 1 egg
  • 1 cup of warm coconut milk
  • 3 ¾ cups of flour
  • 1 tsp of salt
  • ¾ cup of butter, melted
  • 1 tbsp of brown sugar
  • 1 tsp of nutmeg

Directions:

  1. Fold all the ingredients into the yeast water.
  2. Kneed the dough well and allow it the rise double in size.
  3. Kneed the dough for about 10 minutes.
  4. Cover with a damp towel and allow it to rise again.
  5. Cut small pieces of the dough off the whole and roll them into flat pieces.
  6. Bake them on a greased cookie sheet in a 425-degree oven for 15-20 minutes.
  7. Brush the bread with butter before baking, if desired.

 

 

 

Jamaican Corn Bread

Ingredients:

  • 1 cup of cornmeal
  • ¼ cup of brown sugar
  • 4 tsp of baking powder
  • 1 cup of flour
  • 1 tsp of vanilla
  • 1 tsp of salt
  • 1 cup of coconut milk
  • 2 eggs
  • cooking oil

Directions:

  1. Mix all the ingredients together well.
  2. Pour the batter into a greased baking pan and bake the bread at 425-degree for 30 minutes.
