Jamaican Bammy Bread
Ingredients:
- 1 lb of sweet cassava, peeled, grated, rinsed and wrung dry
- 1 can of coconut milk
- 1 egg
- 1 pinch of salt
- 4 tbsp of sugar
- 1 tsp of nutmeg
- 6 tbsp of flour
- vegetable oil for frying
Directions:
- Combine all the ingredients together and mix them well.
- Add more flour if the mix is not pasty enough.
- Form the mixture into patties and fry them in the olive oil.
- Sprinkle them with cinnamon and sugar before serving.
Serves: 7-10 persons
Coco Bread
Ingredients:
- 2 packs of yeast soaking in ¼ cup of warm water
- 1 egg
- 1 cup of warm coconut milk
- 3 ¾ cups of flour
- 1 tsp of salt
- ¾ cup of butter, melted
- 1 tbsp of brown sugar
- 1 tsp of nutmeg
Directions:
- Fold all the ingredients into the yeast water.
- Kneed the dough well and allow it the rise double in size.
- Kneed the dough for about 10 minutes.
- Cover with a damp towel and allow it to rise again.
- Cut small pieces of the dough off the whole and roll them into flat pieces.
- Bake them on a greased cookie sheet in a 425-degree oven for 15-20 minutes.
- Brush the bread with butter before baking, if desired.
Jamaican Corn Bread
Ingredients:
- 1 cup of cornmeal
- ¼ cup of brown sugar
- 4 tsp of baking powder
- 1 cup of flour
- 1 tsp of vanilla
- 1 tsp of salt
- 1 cup of coconut milk
- 2 eggs
- cooking oil
Directions:
- Mix all the ingredients together well.
- Pour the batter into a greased baking pan and bake the bread at 425-degree for 30 minutes.
